If so – any tips? I want to prepare various vegan freezer meals for my friend before she gives birth. She’s not vegan but leaning a bit towards it and very open and happy to have ready homemade food once the baby is here. Maybe we’ll turn her who knows.

She asked if she could find some recipes. This vegan burrito is one of the recipes she found. The rest of us won’t be eating like her every night but will be 1-3 nights a week depending on what everyone wants to eat. But we all decided we’d give this one a try. Our little family of 4…with 3 of us being huge meat lovers…absolutely loved this. My daughter asked for the rice, the black bean/corn mixture, the pico de gallo, guacamole and the vegan sour cream. We are all raving over this and will definitely put onto our list of dinner choices to pull from when we plan our weekly menu.
